Mac 'n' Cheese

Description
A healthier way to make a kid's favorite!
Ingredients
- 1.75 cup milk 1%
- 2 cup pasta
- 3 ounce cottage cheese
- .75 cup cheddar cheese
- .25 cup bread crumbs
- 3 tablespoon all purpose flour
- .125 teaspoon pepper, black
- .5 teaspoon nutmeg, ground
- 1.5 teaspoon paprika
- 1.5 teaspoon canola oil
- .5 avocado
- 10 ounce spinach, frozen
Preparation
1. Bring pasta water to a boil
2. Pre-heat oven to 450 degrees.
3. Use cooking spray to grease an 8×8 baking dish
4. Mix breadcrumbs, oil and paprika in a small bowl and set aside.
5. Cook frozen spinach according to directions on package. Cool the spinach in cold water and squeeze out excess water.
6. Mix 1/4 cup milk and 3 tablespoons of flour in a small bowl. Mix until smooth with no lumps.
7. Heat 1 1/2 cups of milk in a small pan over medium heat.
8. Whisk in flour mixture and continue to whisk constantly so lumps do not develop. Whisk until thickened, about 2-3 minutes.
9. Remove from heat and stir in the grated cheese until melted.
10. Stir in cottage cheese, nutmeg, salt and pepper
11. Cook the pasta until al dente.
12. Drain the water and and cheese sauce. Mix well.
13. Put half the pasta in the baking dish and put spinach on top. Add the remaining pasta and sprinkle with bread crumbs.
14. Bake until bubbly and golden brown, about 25-30 minutes.
