Lightly butter a 9- by 13-inch glass baking dish. With a serrated knife, cut the bread into ¾- to 1-inch cubes (about 6 cups) and scatter half in the prepared baking dish.
In a large saute pan over medium heat, melt the butter. Add onion and saute over for 5 minutes until softened. Stir in the spinach (you may have to do this in batches). Cook until spinach is tender, 4 to 5 minutes, stirring occasionally.
Spoon the spinach mixture over bread cubes in the baking dish. Sprinkle on half of the cheese and all of the ham. Add remaining bread pieces; top with remaining cheese.
In a medium mixing bowl, whisk the eggs, milk, half-and-half, mustard, basil, salt and pepper until blended. Ladle the liquid evenly over the layers in the baking dish. Press top down gently with a fork to make sure egg mixture is evenly distributed. Cover the with plastic wrap and refrigerate for at least 2 hours or overnight.
Heat the oven to 350oF. Remove the plastic wrap and bake the strata in the center of the oven until it is puffed and golden brown, about 45 to 55 minutes. Transfer to a wire rack and cool for at least 10 minutes before serving.
Use day-old bread, brioche, challah, croissants or French bread.
