Cottage cheese is available mostly as "sweet curd," made with rennet enzymes. Harder to find is the more tangy natural cottage cheese, made with the milk leftover from butter making. Cottage cheese can be made from whole, low fat, or nonfat milk and can be standard or organic. You can get cottage cheese in three standard curd sizes: large, medium, and small.
